Remarks Lactose-splitting, gram-negative, facultative anaerobic and rod-shaped bacteria that also produce acids and gases are considered as Coliforms or faecal Coliforms. Coliforms are indicator microorganisms for water-quality and are also used as hygiene indicator for the production of foodstuffs. Lactobacilli belong to a group of healthy bacteria (probiotics) that produce the metabolic end product lactic acid and these bacteria commonly occur in nature but also in the human gastrointestinal tract. Lactobacilli are used for the production of milk products and curing of vegetables, fish, meat or other sausage products. Shigella belong to the family Enterobacteriaceae and initiate Shigellosis (fever, diarrhoea) after colonising of the intestine by secretion of enterotoxins. The pathogens are mainly distributed by polluted water or contaminated foodstuffs. Enterococcus belong to the most thermo-tolerant bacteria beside the spore-forming bacteria and are able to contaminate pasteurised milk products or cooked meat. Some representatives are putrefactive agents and serve as hygienic parameters for production of foodstuffs. Clostridia commonly occur in soil and the environment but these bacteria are also able to colonise the intestine of humans and animals. They grow under anaerobic conditions and produce heat-stable resistant spores. Some species produce endotoxins causing diseases like e.g. tetanus and other species are classical foodstuff spoiling germs. B.cereus is a pathogenic (risk group 2) rod shaped bacterium naturally living in soil and herbal products. Because of the ability to form resistant spores B.cereus can be found in a lot of different foodstuffs and matrices like meat, milk and also cheese. This proficiency testing scheme is designed because the produced toxins can possibly cause food poisoning.
